You have LOVED my Slow Cooker Chicken Curry recipe as it’s so simple to prepare, I decided it was about time to update my beef curryversion to make it as easy as possible.

This recipe also freezes well, and you can adjust the spice level to suit all of the family.

You’ll love this Slow Cooker Beef Curry because:

FAQs about the Slow Cooker Beef Curry recipe:

What is the best cut of beef for the Slow CookerBeef Curry?

I use ‘Braising Steak’, which is the name supermarkets and butchers use for a few different cuts of beef that need slow cooking.

These includechuck, skirt, leg and flank.

It’s also sometimes labelled as Stewing Steak. Any of these cuts that need to be cooked slowly are fine for this recipe.

Do I really not need to brown the beef before cooking in the slow cooker?

If you want to get scientific, the reason we brown meat before slow cooking, is because it causes a Maillard reaction. The process of frying, heating it very hot until it browns, changes the flavour compounds in the meat, basically adding a depth of flavour.

Does it add something to most slow cooked dishes? Yes. Is it vital in this dish, which is packed with other flavour? No.

If you want to brown the meat, it will add another level of delicious flavour BUT I feel that sometimes we need a super quick preparation dinner and it’s worth sacrificing maybe 10% of extra flavour?

I don’t have any curry paste, can I use curry powder?

Yes, depending on your curry powder and your taste, you’ll need to use 3 – 4 tbsp of curry powder instead of the paste.

I would say, I think the paste does work better than powder in this recipe though as unlike in a Slow Cooker Chicken Curry, beef does need a really robust flavour to complement it.

What can you serve with Beef Curry?

You can serve all of the usual curry accompaniments with this Beef Curry.

Rice, poppadums, yoghurt with some mint mixed through and a salad of tomatoes and cucumber works really well.

Myeasy flatbreadswould be soooo amazing dunked in!

Slow Cooker Beef Curry

By Sarah Rossi

ThisSlow Cooker Beef Curryis mixed up in just 5 minutes, no preparation required. A tasty 'fakeaway' it also happens to be light and healthy.

Prep Time: 5 minutes minutes

Cook Time: 4 hours hours

Total Time: 4 hours hours 5 minutes minutes

Servings: 6 People

Ingredients

For slow cooking:

  • 1 kg Braising steak
  • 200 g Curry spice paste
  • 2 Onions, Peeled and chopped
  • 4 Cloves Garlic, Peeled and chopped
  • 1 Inch piece Fresh ginger, Peeled and chopped finely
  • 2 tbsp Ground cumin
  • 400 g Tin of tomatoes
  • 2 tsp Garam Masala
  • 1 tsp Sea salt
  • 1 Beef stock cube

Before serving:

  • 100 g Spinach leaves
  • 2 tsp Garam Masala
  • 4 tbsp Mango chutney

Metric - Imperial

Instructions

  • Put all of the slow cooking ingredients into the slow cooker and cook for 4 hours on HIGH or 6 hours on LOW.

  • Add the spinach leaves, remaining Garam masala and mango chutney before serving.

Notes

Note 1 - Beef Braising Steak

'Braising Steak' is the name supermarkets and butchers use for a few different cuts of beef that need slow cooking. These includechuck, skirt, leg and flank. It's also sometimes labelled as Stewing Steak. Any of these cuts that need to be cooked slowly are fine for this recipe.

Note 2 - Curry Paste

Any curry paste you like to your taste will work here. I like Patak's Jalfrezi or Madras.

Note 3 - Onions, garlic and ginger

I use pre prepared frozen, chopped here. An onion weighs about 150g so I replace the onions with 300g (2.5 cups) of pre chopped. Garlic is about 5g per clove so I use 20g (4 teaspoons). 1inch of Ginger equals about 5g (1 tablespoon).

Note 4 - Spinach

If using fresh spinach, I just stir in and the heat of the curry will wilt it. If you want to use frozen, defrost it first in a pan or microwave and then drain it and add it to the curry. A lot of water comes out of cooking spinach. You can also cook and drain the fresh spinach if you're very particular about your curry not being watery at all.

    Love this recipe.
It’s the best home made curry I’ve ever made and so simple.
Often recipes are expensive to follow and turn out disappointing, but not this one.
I used hot curry powder as I did not have curry paste
Neither did I have Garam Masala or cumin powder but the outcome was superb.
I will purchase and use all suggested ingredients next time I make this ,which will be super soon as it was fabulous.

Super simple to make. Made this for 12 servings but used Patak’s Balti paste instead. I found the suggested 400g of paste a little too overpowering so next time I will try 300g. I will also try making with the madras or jalfezi pastes. Otherwise, it has great potential. Thanks for sharing.

Cook it ling and slow, 4 hours minimum in a low oven, keep testing, when the fibres fall apart it's tender. Once the spices and veg have cooked, add in the coconut milk and a couple cups of chicken stock. Turn the heat up so it comes to a boil and then lower to about medium heat and cook for 10-15 minutes. Just until it starts to thicken! I normally do 10 minutes, but if you like a really thick sauce, take it longer.

Take the lid off

Place the cooker on a high setting, and open the lid for 30-45 minutes to let excess moisture cook off. The liquid will reduce, leaving you with a thick and delicious gravy or sauce. (Tip: This trick can also be applied for thickening stews, or when you've accidentally added too much liquid.)

How do Chinese make beef so tender? ›

In Chinese cooking, proteins like beef, pork or chicken are velveted first before stir-frying them. There are several ways to velvet, but at its most basic level, it involves marinating meat with at least one ingredient that will make it alkaline. Coconut milk and cream are mostly interchangeable in recipes such as curries and soups. If you prefer a richer flavour and texture, try coconut cream or vice versa. However, be careful when substituting coconut milk and cream in baked goods.

Do I really need coconut milk for curry? ›

If you prefer to go the coconut-free route (or if you don't have coconut shreds, cream, oil, water, or butter on hand), you can use plain old milk — whichever kind you prefer. Whatever you're making won't have the same flavor as it would with coconut, which may make things like curries taste a little flat.

Does chicken stock go in curry? ›

Cook for 5 mins to coat the chicken in the masala and seal in the juices, and then pour over 250ml hot chicken stock. Simmer for 8-10 mins without a lid until the chicken is tender and the masala lightly thickened – you might need to add an extra ladleful of stock or water if the curry needs it.

Before adding the beef to the curry, a quick sear or browning in the pot can greatly enhance both the taste and texture of the meat. Browning creates a caramelized crust, adding a depth of flavor that beautifully harmonizes with the curry sauce.

A cornstarch slurry is a mixture of a cold liquid with cornstarch. It is used as a thickening agent, and is particularly common in Asian sauces. As a rule of thumb, dissolve 2 parts cold water and 1 part cornstarch. Add the slurry to your sauce as it simmers in the slow cooker.

How to stop slow cooker meals from going watery? ›

Prop the lid up for evaporation.

While your dinner cooks, prop the lid open a bit so that moisture can escape and thicken the stew naturally without extending the cooking time too much. Skewers or chopsticks between the lid and the crock of the slow cooker work well for this.
