Everyday at about 3pm, I start thinking about what I am going to make for dinner. For the most part I am at my desk at work so I hop online and start looking for ideas.

I usually have at least a vague idea but sometimes I’ve got nothing! One day all I had at home were some chicken breasts so I thought about what ingredients I had in the kitchen and believe me, it was limited!

When I got home I put them all together and marinated some chicken breasts. When we finally tasted it, we realized it was Yakitori chicken!

And that is how this recipe was created!Serve it with Instant pot brown rice and asparagus!

One thing that is often overlooked with Clean Eating is the simplicity in the dishes. Yes, some dishes, especially desserts, can be time-consuming. But dinner on a nightly basis can be simple.

After all, the core concept of clean eating is to eat as close to nature as possible. That means keeping the ingredients simple. This healthy recipe is a great example.

With only 5 ingredients, this Yakitori recipe uses Chicken breasts, soy sauce (or liquid aminos), honey, garlic and ginger. If you are really short on time, the marinade can be cut down to 20 minutes.

Broiling the chicken only takes about 10 minutes. If you don’t want to use skewers, just lay the chicken strips in a single layer on a baking pan. Keep it simple!

One of the best parts of this dinner is how much the kids love it. So, not only do they actually eat dinner, but they also eat leftovers…trust me that is a big feat in our house!

Yakitori Chicken also makes a healthy lunch the next day. If we want to switch it up, I will put it in a hamburger bun with mayo, lettuce and tomatoes (like a teriyaki chicken sandwich). So delicious!

If you choose to do this, boil any leftover marinade in a small sauce pan. It will cook down into a thick sauce and kill any germs from the chicken.

Then drizzle it over the chicken in the sandwich. Yum!

In the recipe, I list 1/8 -1/4 Cup of Honey. The kids like it with 1/4 cup but the adults like it more savory with only 1/8 cup. Add honey to your taste preferences. Both are good!

If using Skewers, drench them in water prior to adding the chicken. This will keep them from burning under the broiler
