I don't know who ever came up with the idea of adding salt to caramels, but I would love to thank them one day. The combination of sweet and salty is usually delicious (that's why my husband is so happy when I make him some chocolate-covered bacon!)

I do love salted caramels but I can't quite figure out why they are so much more expensive than other caramels (if you can even find them in the grocery store). I can buy a huge bag of caramels for about $1.50 when we are making caramel apples, but throw about ½ of $0.01 of salt on those caramels? The price triples! Caramels are just so easy to make and besides - these salted caramels will be a nice addition to the cookie trays that I make to pass out at Christmas!

I've made caramels many times and tasted homemade caramels from others and there is one mistake that many people make that can easily be avoided....when you are first heating up the water, corn syrup and sugar mixture, you want to make sure that you keep the sugar crystals off the side of the pan or else you can end up with some "crunchies" in your caramel. I do this easily by putting the lid on the pot for about a minute as soon as it comes to a boil. This traps the moisture in and "washes" any sugar crystals back in to the mixture.

It's not the end of the world if you have those "crunchies", but most people do prefer the smooth creaminess of caramels without the crunchies!

One last thing - when you are adding the cream and butter to your sugar syrup mixture, make sure to do it very slowly or else you can have a bubbled up mess! Just trust me on this one!

Ingredients

  • 1 cup heavy cream
  • 1 ½ cup sugar
  • ½ cup Butter
  • ¼ cup Corn Syrup
  • ¼ cup Water
  • ½ teaspoon Vanilla Extract
  • ½ teaspoon Course Sea Salt

Instructions

  • Spray with non stick spray and line an 9×5 loaf dish with parchment so that excess paper comes up the sides.

  • Cut up butter into slices and combine with cream and microwave 1-2 minutes until butter is melted.

  • In the medium to large saucepan, combine the sugar, corn syrup, and water.

  • Stir just until the sugar is moistened and uniform, being careful not to splash sugar on sides.

  • Heat over medium heat until the mixture comes to a boil.

  • Cover with a lid for 1 minute (this helps wash any sugar on sides back in).

  • Remove lid and do not stir the after this point.

  • Place the pot with the sugar mixture over medium to medium-high heat.

  • Let the sugar syrup come to a boil without stirring.

  • Cook until mixture reaches 320, the syrup will begin to darken slightly.

  • Turn off the heat and slowly add the warm cream and butter mixture a little at a time while gently whisking (will bubble violently).

  • Turn burner back on to medium-high.

  • Let the caramel come to a boil and reach 240 without stirring.

  • Remove from heat and whisk in the vanilla.

  • Pour into the prepared pan.

  • Cool 20 to 30 minutes then scatter the salt over the caramel.

FAQs

Do I need to spray silicone molds for caramel? ›

Alternatively, if you make caramels enough, I would recommend using silicone molds (shown at the bottom of the page). If using a 9x13 inch pan, lightly oil the parchment paper and sides of the pan. If using molds, lightly spray with cooking oil.

How to pour hot caramel into molds? ›

The Pouring Process

Here are the steps to follow: Carefully remove the saucepan from the heat and place it on a heat-resistant surface. Using a heat-resistant spatula, quickly and carefully pour the hot caramel mixture into the molds or baking dish.

What is the silicone pinch test? ›

Whenever you buy a silicone product you can easily test to see if it contains fillers using the pinch or twist test. Its as easy as it sounds – pinch or twist the silicone – if it changes to a whiteish color, then it most likely has plastic fillers in it and is not 100% pure silicone.

Do silicone molds need to be greased before baking? ›

As a result, they do not have to be greased to release the baked goods from the molds. If you want to be absolutely sure that nothing sticks, you can rinse the molds with cold water before baking and fill in the dough immediately afterwards. Silicone molds can be used, rinsed and reused as often as you like.

What makes salted caramel so good? ›

These are sweet, salty, sour, bitter and umami. Salted caramel combines two of these, giving an effect that chefs call “flavour layering”. Salt also acts as an enhancer of flavour (that's why you sprinkle it on your chips, for instance), so that's why it makes caramel taste even better.

What is the best thing to wrap homemade caramels in? ›

Most caramels will need a little time at room temperature in order to cut more easily. Cut in squares and wrap in waxed paper or parchment paper. Wrapped caramels can also be frozen.

Why are my homemade caramels sticky? ›

Too much humidity – An overly humid environment can make caramel sticky and create a less than desirable layer of scum on its surface.

Why do you put hot water in caramel? ›

When making a wet caramel, water is added to help dissolve the sugar before cooking. Like dry caramel, you want to gently move the sugar mixture in that same side-to-side paintbrush-like fashion until the sugar dissolves.

Do you add milk when melting caramel? ›

The key to getting it right is to use soft caramels as opposed to hard. You must also add some sort of liquid, such as milk or cream, to prevent the caramels from drying out. Knowing these tricks will help you to melt caramels with ease.

Do you have to spray silicone molds before using? ›

4. Greasing Can Help. Generally, good old greasing is not really necessary with silicone molds. However, using cooking sprays or even greasing before baking and cooking can make your life a lot easier when it comes to washing them later on.

Do you need release spray for silicone molds? ›

Preserve Mold Details: For silicone molds with intricate details, a release agent prevents distortion or damage to those details during demolding. Multiple Casts: Applying a mold release agent can extend the lifespan of your silicone molds by minimizing wear and tear caused by frequent castings.

Do silicone molds need cooking spray? ›

Most silicone requires a coating of grease and flour to ensure clean unmolding. My preference is Baker's Joy spray because it has no residual smell or taste and the cakes unmold perfectly. When it comes to coating small cavities of silicone molds, the spray also coats the top of the molds and bakes onto it.

Do you spray silicone candy molds? ›

NEVER use nonstick spray of any kind on your silicone molds or Silpats. The propellants in the spray will leave a residue that will build up over time and leave a sticky residue that will have the opposite effect and everything will stick.
