It’s not summer yet, when it’s intolerable to eat complete meals, but we’ve already started to have breakfast for dinners. Do you have breakfast for lunch or dinner? When we leave winter and comforting foods behind, we often prepare breakfast foods for dinner like these Cheese Stuffed Peppers or Menemen, which is a very tasty egg dish with tomatoes and green peppers and have these in addition to sliced tomatoes and cucumbers, olives, various cheeses, jam or honey, which areTurkish typical breakfast foods. And a newly brewed Turkish black tea is almost a must to complement all these.

No other additions, but I do love innovations in cooking, so I added grated carrot and red bell pepper to give my fritters some color and additional flavors.

I have been using this recipe for years. I always use goat cheese instead of feta because it's my favorite. I love it. The family loves it. It's so good with plain yogurt.

Added garlic, cumin, pul biber and black pepper. Also used 1 less egg but added a small amount of natural yoghurt. Delicious!

Good base recipe. Tasted a bit plain. I'd want to add some spices-maybe cumin and pepper? Some garlic and onion? Also found them a bit eggy. Would probably use one less egg next time.

Thanks Michelle for the feedback! Adding cumin would really be nice. The feta cheese I use is so strong, which I'm quite happy with. That's why I don't need any additional flavors, but I'm sure adding green onion and garlic will take these fritters to next level.

Could you use coconut oil to fry with instead of olive oil and still get the same product?

Hi Emily, I've never used coconut oil for frying, so I'm not sure.

FAQs

Why are my zucchini fritters falling apart? ›

Typically, there is more than likely not enough of a binder in the fritter batter mix. Cheese, bread crumbs and eggs all act as binders and will help to hold these vegetable cakes in place. Fritters may also fall apart if you fail to use enough oil, or too much!

Why are my fritters soggy in the middle? ›

Why fritters are soggy. The most common causes for soggy fritters are too much batter (basic flour and egg batter like used in pancakes will never cook up crispy), and whatever you're frittering leeches too much water when cooking.

Why are my fritters tough? ›

Don't overmix. Overmixing can cause the fritter to be gummy and tough. Only mix as much as you need to. I recommend skipping a mixer and doing this by hand to avoid overmixing.

Can fritters be frozen? ›

You can freeze any fritters you don't need. Lay them on a baking sheet, then once frozen, transfer to a freezer bag. Reheat the frozen fritters in the oven (180C/160fan/gas 4) for around 10 mins until piping hot. Allow to cool to lukewarm before serving.

Why add baking powder to fritters? ›

They just need a simple, light batter of flour, cornstarch, and baking powder mixed with seltzer to tie them together. The seltzer and baking powder ensure that the fritters are shatteringly crisp–even slightly tired vegetables emerge from the oil crunchy, fresh, and sweet.

Should fritter batter be thick? ›

Because fritters need to maintain their form and not run when they hit the oil, your batter should be sturdy and thick, more like paste than Elmer's glue. It's the mortar that holds your ingredients together.

Does baking soda make fritters crispy? ›

Is baking soda or powder best for frying? A pinch of baking soda can help produce crispy fried foods. It reacts with the acid in the batter to create carbon dioxide bubbles. These lead to an airy batter and a crisper, fluffier result.

How to know when fritters are cooked? ›

Let it sizzle! Your pan needs to be properly heated up before cooking. If the fritter doesn't sizzle when it hits the pan, you know it's not ready! Don't overcrowd the pan, as this causes the temperature of the pan to drop, resulting in limp, under-cooked fritters.

Why are my fritters raw in the middle? ›

If the fritters feel raw and doughy on the inside there could be two possible reasons. One is that the oil is just too hot, causing the outside to brown too quickly. You may find that you need to reduce the heat under the pan during cooking.

Can you reheat zucchini fritters? ›

We would suggest thawing the fritters overnight in the fridge then spreading them on baking sheets and reheating them in an oven preheated to 200c (400F) for 8 - 10 minutes, or until piping hot all the way through. Reheated foods should be treated with extra care.

What to eat with veggie fritters? ›

Potato salad, fresh chopped greens, or pasta salad are all great matches for zucchini fritters. This pairing is perfect if you're looking for a light summer lunch.

Can you leave fritter batter in the fridge overnight? ›

You can make the batter up to 1 day ahead of time and store in the fridge.

How do you keep fritters from falling apart? ›

Get the skillet searing hot.

A hot skillet will start cooking the fritters as soon as they hit the pan. That helps sear a crust on each fritter that will hold them together. A pan that's too cool will create a lackluster crust that could result in a floppy fritter if you're not careful.

Why are my zucchinis splitting? ›

Cucurbit pests also cause damage to vines, which can lead to squash or cucumber vine splitting. In particular, the larvae of the squash vine borer will make entrance holes in the stem and then tunnels inside the vine to feed. These creamy white, maggot-like larvae are most active during late June and early July.

How do you keep zucchini from falling over? ›

Some people also mound dirt around them if their zucchini plant falls over. This may be a good thing and allows the plant to sprout more roots, giving it more support. If you have actual floppy zucchini plants, they might just need some water.

How do you keep breading from falling off zucchini? ›

Transfer the breaded zucchini onto a baking sheet or large plate and refrigerate for at least 15 minutes or up to 3 hours. This will allow the breadcrumbs to really stick to the zucchini.
