We’ve been ordering Blue Apron deliveries for years in our house. I’ve shared my love for their meals on this blog for a while now (and well before we began working together!) and since I’ve ordered so many deliveries, I thought a post highlighting some of my favorite Blue Apron recipes would be a fun one to write to hopefully give you some new recipes to try when you’re scratching your head and trying to figure out what to make for dinner this week. I’ve shared a little bit about my giant, overwhelmingly full homemade recipe folder with you guys before. It’s overflowing with recipes I’ve tried and loved from magazines and the internet and a large number of the recipes in this folder are ones I’ve saved from our four years of ordering Blue Apron deliveries. Today I’m excited to share five of my all-time favorite Blue Apron recipes with you guys that you can (and should!) try at home!

We’ve prepared so many Blue Apron meals in our house over the years and continue to look forward to receive chef-designed recipes and farm fresh ingredients on our doorstep. One thing I’ve loved about Blue Apron deliveries from the very beginning is the detailed recipe cards included in each box that break down exactly how to make their recipes with picture tutorials. This makes the recipes easy to follow and – perhaps the best part – easy to recreate!

It didn’t take me long to discover that Blue Apron shares their recipes online as well, so if you happen to accidentally toss a recipe card after you’re done making it, you can still find a past favorite recipe on their website. This also means I can easily share some of my favorite Blue Apron recipes with you guys that you can make at home. Awesome, right?

All of the recipes I’m sharing below are recipes I received in a past Blue Apron delivery and absolutely loved. You may notice that many of them are vegetarian and that’s because Ryan and I often order vegetarian boxes because we love the way Blue Apron helps us find new ways to enjoy meatless, often veggie-packed meals that taste amazing. (When you request a delivery you can specify what kind of box you want and whether you’d like specific meats, fish or poultry excluded.)

Five Blue Apron Recipes You Should Make At Home

This recipe was in my most recent Blue Apron delivery and was actually the inspiration behind this blog post. In the past, I’ve made two or three udon noodle dishes from Blue Apron and they’ve all been slam dunks so I had high hopes for this one. The stir-fry was a breeze to make and packed with veggies (sweet peppers and a full head of bok choy) but the nutty flavor from the sesame oil and the tangy zip of fresh ginger stole the show. The slightly chewy udon noodles and flaky salmon got rave review from both me and Ryan and the entire dish took me less than 30 minutes to make win!

This recipe is a hearty, vegetable-packed stew that made our whole house smell fantastic. Keep this one on your radar as the weather continues to cool down because it’s the perfect dinner for a chilly fall or winter night. The base of the stew is sweet roasted butternut squash and it’s flavored with warm curry spices and garnished with bright marinated Brussels sprouts. It’s colorful, healthy and full of vibrant color, texture and flavor.

This recipe was one I was not all that excited to make but that’s one of the things I love most about Blue Apron… sometimes it’s the “underdog” recipe in your delivery that will end up surprising you most by becoming your absolute favorite. After I made this warm and comforting salad, I went on a mission to find a za’atar spice blend (a traditional blend of spices including oregano, thyme and sumac) and was so happy when I found it at Whole Foods so I could recreate this recipe at home ASAP. While it may look simple, it wows in the flavor department and there’s a reason so many people gave it rave reviews on the Blue Apron website. I’ve also doubled this dish so I could have extras on hand and it tastes great as leftovers, too!

As I look at my list of favorite Blue Apron recipes, it’s becoming increasingly clear that I love their dishes that involve salmon and chewy, earthy grains. This slightly sweet and savory dish was bursting with flavor thanks to crispy-fried rosemary (Ryan’s favorite part of the recipe), tangy tangelo (which I’ve successfully recreated with regular oranges) and sautéed apple. Something about this dish reminds me so much of fall – maybe the crisp the apples and the warm farro? – and I’m already excited to make this one again after we go apple picking in a couple of weeks!

Though I grew up eating a lot of fish as a kid (my dad loves spearfishing and we’re a huge seafood family), cod is one type of fish we didn’t eat a lot of in our house. I credit Blue Apron for opening my eyes just how delicious cod is and how easy it is to prepare it a myriad of ways. I still remember texting my mom about this dish when we realized we both ordered Blue Aprons during the same week. I love the way this recipe incorporates fish, grains (black rice!) and greens (spinach) but elevates these basic, healthy ingredients with the help of miso paste, fresh ginger, soy sauce and scallions. (Note: The one obscure ingredient that might be hard to find is yuzu juice, but I’ve swapped it for orange juice and we still loved the recipe.)
