Every week we pull together some great Canadian recipes from Canadian food bloggers around the web featuring one main ingredient or dish. Parsnips are a highly underused root vegetable so this week we're sharing parsnip recipes with you!

In our opinion, parsnips are terribly misunderstood vegetables that deserve a lot more love. So here we are, bringing you over 10 parsnip recipes to help you appreciate this very tasty fall root vegetable.

Yes, there are parsnip soup recipes. Because parsnips pair up so nicely with other fall veggies like squash, apples, pears, sweet potatoes. leeks and potatoes.

But they are also one of the most delicious roast vegetables you can cook up. They have a sweetness that oozes out and caramelizes during the roasting process that turns them into an almost candied veg that's hard to resist.

Deep fry them for an addictive snack you can't put down. Mashed parsnips or pureed parsnips are a quick and easy alternative to mashed potatoes (with a lovely flavour). They make a wonderful Thanksgiving side dish.

You can even make parsnip cake which, given how closely related they are to carrots, makes complete sense if you think about it!
